I've decided to meal plan and I hate thieves.

In an attempt to be more organized, eat out less and save money, I've decided to give this whole meal planning thing a whirl.  I make no promises, but I am going to give it the ole' college try this week and see how my checking account and waist line like it.

Here is what is on the menu at Casa de Bargain Blonde this week.

Monday (yesterday) - Chicken and Rice Casserole
This is my absolute favorite meal in the whole wide world and only 4 ingredients (rice, chicken, cream of mushroom, black olives). Sounds sick, but it's my fave.  

Tuesday  - Baked Mushroom Pork Chops

Wednesday - Texan Ranch Casserole

Thursday - Lia Joy's Chicken Spaghetti

Friday - Leftovers

Let's not kid ourselves completely. I highly doubt I'll be cooking meals on Friday nights, so leftovers it is. Any avid meal planners out there that can share their tricks of the trade?  Please leave any meal planning advice in the comments. 

In some shocking and sad news, I got a call from my Mom this morning who is away on business telling me burglars broke into her house last night.  My first question was, "Where is Nicky (my cat)?"  Turns out, he has yet to be located which breaks my heart.  I really, really, really hope he is hiding in a closet or under the bed because if not ... well, I don't even want to think about it.  

The police were at her house last I checked taking finger prints and the likes. The scumbags who broke in stole some electronics, a box of my blank checks (awesome), etc.  I really don't understand people. Why would someone do this? Get a job and don't steal from people who work hard for their money.

  4. I really really hope Nicky is home safe and just hiding, which I think is pretty likely. If I were a cat and some chumps broke in, I'd scurry under a bed faster than you could blink. Saying prayers for him!

    So glad your mama has insurance cause this SUCKS. So frustrating that people do these things. :(

    Just pinned that Texan Ranch chicken casserole (I can easily sub fake chicken) and it looks so damn good I am salivating.

  6. I'm so sorry about the house break in! Cats are pretty smart, so chances are good that he'll come back home.

    Good luck with the meal planning. I typically have the same thing everyday for lunch Tuna packet, wheat thins, and fruit. I know it's boring, but I like consistency. When I tire of it, I switch to salads.

    For dinner I'll usually have homemade lunchables (sometimes I'm too lazy after a workout to cook), or I'll grill up different flavored chicken Sunday night and have that with vegetables. Or make other dishes with it like: fajitas, lemon pasta (with red pepper flakes, garlic, and parm), chicken fried rice (I don't know if it counts as fried if I'm not using oil...).

    And every now and then I'll make chicken fried chicken with grilled veggies. Not too often since fried food is obviously not the best option, but every couple of months I get a craving for it.

  7. Fingers crossed that Nicky is just hiding. That Texas ranch casserole looks yummers. If you really want to get into meal planning you should think about doubling some recipes and then adding those to your freezer. I am all about freezer meals when I am feeling super lazy.

  10. my mom's house has been broken in 4 times! 4 freaking times! they live in a damn neighborhood and have an alarm. its nuts! they have pretty much lost everything of any value by now. its sick! and every time it pisses us off!

  16. I live by meal planning! It is the easiest way to save money not sure about the waist because mine is not looking it's best! I hope they find your cat. I could go on about worthless pieces of shitttt who ruin what other people work for.I hate what our society is becoming.

  19. I'm really sorry to hear about your Mom's place! That's so awful! I hope Nicky returns home soon - safe & sound!

    Also, I usually meal plan... sometimes I post it on the blog but, I always try to make meals that have the same ingredients or keep ingredients that you know is in a lot of recipes always on hand. IE: onions, bell peppers, ground turkey, tomatoes, etc.

    Thieves suck!! I hope whoever broke into your mom's is caught. There is a punk who lives across the street from us who has been in and out of jail for burglary charges and it creeps me out so bad. Especially when my husband is away hunting. Thankfully though he was finally put away for something more serious than burglary. So we haven't had to deal with him for awhile.

    Chicken & Rice casserole is one of my fave meals too!! So easy and yummy! And I think I want to make those porkchops this week...they look awesome and I am always looking for new pork chop recipes!

  31. When I was going through my first divorce I was stayin by my moms and someone broke into her house. Based on what we taken we think it was my ex or someone he knows. Then we found out from the cops that there were a string of robberies going on in town so we are not 100% sure. The cops dusted for finger prints and nothing came up. Sneaky little bastards! Thankfully Dakota moms dog was ok but still scary! I hope you guys find Nicky!

  33. Oh no - that's horrible! I really hope they are able to find your cat, that is so awful. My husband's parents have had their house broken into twice - once while I was living with them. It really makes you feel violated :(

  34. Those meals sound delicious! My least favorite thing about cooking is trying to portion how much I cook. After much debate I've realized it's IMPOSSIBLE to cook for one person unless you buy individual Ramen or Easy Mac--heeellllloooo sodium central. Keep kicking ass!

  36. I see from the comments that your cat is back! So good to hear. I've actually thought about that before - I don't care what someone takes from my house, but if they let the cat out I would freak out.
