What I've been eating since starting Tone It Up

Today we talk food because honestly, who doesn't love to stuff their face?  If you don't, we can't be friends because I like to get down with some food.  I refuse to starve myself with gross, tasteless food, so I've found some delicious, healthy meals to help me reach my weight loss goals.


This post has all the meals I've eaten so far on this plan and they are all yummy in my tummy!  The name of each recipe links to the recipe video or web page.  As always, let me know if you have questions. I'm happy to answer!

The Tone It Up Protein Pancake with all natural honey drizzled on top.

I normally don't eat the yogurt with the protein pancake (like in the pic above), but on Saturday I just combined my breakfast and my mid-morning snack as one meal.

Normally mid morning I have 1/2 C of non-fat Greek yogurt and 1/4 cup of bluberries.  I measure it the night before so it's easy to grab out of the fridge in the morning to take to work.  If you need a crunch with your yogurt, add a sprinkle of granola or almond slivers. Goodness, granola is good.


This is my absolute favorite Tone It Up (TIU) meal and it's what I've been eating for lunch this week.  What we have here is the TIU member-submitted Black Bean Tostada recipe, but I use the Ezekiel Sprouted Grain Tortillas (bake at 350 for 10 minutes, flip over and bake another 10 to get the tortilla crispy).  I also add nitrate-free chicken slices chopped up.

If I don't eat the tostada for lunch, I'll have a big salad with low sodium turkey from my local deli, lots of veggies and balsalmic vinaigrette as the dressing.

The easiest thing for me to do as an afternoon snack is a Luna protein bar and the S'mores variety is my fave flavor!  The ThinkThin and Lara bars are some of the TIU girl's favorites.  I'll drink some Green Tea with it if I'm feeling frisky.

For dinner I've switched between ground turkey and quinoa (pronounced keen-wa), chicken or tilapia with veggies or a side salad.
Mrs. Dash skillet baked chicken and baked green beans flavored with Mrs. Dash.  Mrs. Dash is salt-free and a fave of the TIU girls. 

I grilled chicken kabobs on the grill with veggies last Saturday. I just marinated the chicken with a healthy oil-based dressing for a few hours in the fridge, cut it up and added chicken and sliced veges to kabob sticks.  I also grilled green beans and mushrooms in a foil packed with a little olive oil and Mrs. Dash.  Easy and good!
Zesty Tilapia and mushrooms!  The recipe calls for some dried mushroom I've never heard of and didn't care to look up, so I just use regular button mushrooms and it's deelish.  This tilapia is SO easy and SO GOOD. Seriously, out of this world.  The recipe also calls for butter, so use olive oil instead.  

Quinoa (keen-wa) and ground turkey stuffed tomatoes. I kinda made the recipe up so if you don't love it, sorry!  Preheat oven to 350.  Cut the tops off of 8 to 10 large red tomatoes and scoop the insides out.  Brown 1 lb of lean ground turkey with mushrooms, chopped onion and minced garlic.  Add 2 low-sodium taco seasoning packets to flavor the turkey once it's browned (I used an all-natural seasoning packed I found).  While your ground turkey is browning, cook one cup of quinoa according to package instructions.   Combine the quinoa and ground turkey.  Place the tomatoes in a glass caseerole dish and fill with the mixture. Add about a 1/2 inch of water to the bottom of the casserole dish (steams the mushrooms while baking).  Bake at 350 for 25 minutes. If you want to add cheese to the tops, take out 5 minutes early, sprinkle cheese and bake the last 5 minutes. I don't eat dairy in the evening so I don't use cheese, but it's a good addition. 
If you are like, "What the hizzle is quinoa?", don't fret. I didn't know what it was either, but it is cooked just like rice, but it is actually a seed and not a grain.  It's super healthy for you and the TIU girls highly recommend it on the diet plan.

Become a healthier you with these 5 common sense tips

I have such a happy heart from all the positive feedback I received from my post yesterday. Keep them coming! I can't wait to e-mail you all back, especially those of you with questions.

As I mentioned yesterday, today I'm sharing easy things anyone can incorporate into their daily lives to become healthier.  I said I'd share recipes too, but this post ended up being longer than I thought, so I'll share recipes tomorrow.  It will just be a week of health here on The Bargain Blonde!  (FYI - Friday I will have Friday Favorites)

1. Cut out all artificial sweeteners.  I know this isn't the first time you've heard artificial sweeteners are bad for you and can even cause cancer.  I've heard it for years, but disregarded the advice.  Finally I'm listening and I've switched to using Truvia (brand of Stevia, which is a natural sweetener made from plant derivatives not chemicals) and a splash of skim milk instead of flavored coffee creamers and Splenda. I used to drink a Diet Coke or Coke Zero every afternoon, but now I have Green Tea or water and I am perfectly content. I know some of your love for diet drinks may run deeper than mine, but I promise you can give them up if you really want to. Drink carbonated water if your need the fizzle.

2. Drink lots of water.  Again, how many times have we heard this?  We all know water is good for our bodies, hair, skin, etc., but a lot of us don't drink enough of it.  The Tone It Up (TIU) girls recommend dividing your body weight (in pounds) in half and drinking that many ounces of water.  So if you weigh 150, you should be drinking 75 ounces of water a day. 

If you really hate drinking water, flavor it with fresh fruit or lemons.  Keep a big bottle on your desk at work and know how many bottles you need to drink to stay on track with your water intake for the day.

3. Have fresh fruit and veggies available always. Say bye bye to processed snack foods.  A little bit of prep can make a big difference in choosing healthy options over junk.  I've made sure I have fresh fruit and veges cut up in my fridge in the event I'm hungry but in between meals.   This way I have a smart, healthy option at my disposal.  Pre-cut fruit in your fridge is an easy snack you can grab instead of something like chips. The Tone It Up girls live by the motto, "A piece of fruit never made anyone fat."  So make the right choice!

4. Limit starches and dairy after lunch time.  I'm not saying don't ever have them at night, but if you are trying to slim down, it's best to limit these when you can in the evenings.  On the TIU plan, your evening meal essentially consists of veges, unlimited green veges and lean protein.  I've started do this and feel so much lighter and "cleaner" in the mornings.  

5. Move your booty.  Small changes add up. Instead of taking the elevator, take the stairs. Park your car in the farthest spot from the door and walk.  Yes it's summer in Texas it is hot as HELL but a few extra steps aren't going to kill you.  You'll just burn a few extra calories.  Go for a walk with your dog/roomie/lover after dinner instead of just sitting on the couch. Wake up 30 minutes earlier than normal and walk 15 minutes away from your house, turn around and walk back.   Just be more active!  The more active you are, the less likely you are to be bored and eat out of boredom.  Win-win, right?


Whatever you do, don't give up.  Your body isn't going to change over night just like you didn't gain extra weight over night.  You have to take it one day at a time and if you slip up, it's not the end of the world. We all cheat and we should.  But if you are making smart nutrition decisions the majority of the time, you WILL feel a difference and eventually see a difference.  Trust.

The "Tone It Up" plan and me

I first stumbled across the Tone It Up girls, Katrina and Karena, via Pinterest months ago.  Wouldn't these toned bishes catch your eye too?

I followed the link to their Web site and saw that these perfectly sculpted ladies had a blog, nutrition tips, printable workouts, and lots of YouTube work-out and nutritional videos.  A lot of their stuff is free, but it you want their comprehensive diet and fitness plan including recipes, workouts and a 7-day slimdown, you've gots to pay.  You can choose between the original plan, vegan, vegetarian, gluten-free, gluten-free vegetarian or pescatarian and it will cost you $149.99.  Go to their site to read more about the pricing and what you get for your money.  

I was mesmerized by how perfect they looked, but didn't think much about it again until very recently.  You see, I'm completely out of shape and that's putting it nicely.

Simply put, I'm fat. I'm not saying this so you can tell me, "You are not fat. You are beautiful."  I don't need to hear that. I don't want to hear that.  No, I don't need to be craned lifted from my bed every morning, but I'm unhealthy, it's not cute, I'm not happy with body and it is time to do something about it.

Prior to committing to the Tone It Up plan, I stumbled across another girl on Pinterest named Laura who blogs/vlogs about her weight loss.  I spent hours watching her body transformation videos and started following her on Instagram, Facebook and Twitter.  She is truly an inspiration and has a blog Laura Must Lose Weight if you want to check it out.

Girlfrand is brave because she puts it ALL out there.  We're talking filming a YouTube video in nothing but her bra and panties at her heaviest weight of 195.   As much as I'd love to be able to show you my transformation, you will not be seeing me in my bra and panties. Ever. Laura covered that one for us thank the Lord.

What I like most about the TIU girls and Laura is they are all about clean, healthy eating and working-out. None of it is a quick fix. It's not a fad diet.  It's about avoiding processed foods and eating balanced meals of carbs (yes, you eat carbs, but at the right time of day and the right portions), lean proteins and lots of fruits and veges!  You also eat fats, but good fats like fat from olives, olive oil and avocados.  You even can sneak in a few glasses of red wine a couple times a week if you like to hit the bottle.

The plan is so sensible.  It's not an extreme diet that inevitably sets you up to fail (i.e. cabbage soup diet, Atkins, egg white diet, etc.).  On the TIU nutrition plan, you eat five meals a day, you drink lots of water, you work-out and you have an entire online community of TIU members who are there to encourage and hold you accountable.  Hence, if you follow me on Instagram/Twitter, you have seen me blowing up your news feed with pictures of healthy meals.  These are called "check-ins" and that's what every member of the TIU community does on the daily.

Now you know more about the TIU plan and why I've decided to do it.  I am in no way associated with TIU or Laura. I simply stumbled across them and was compelled to make a life change.  With that being said, there are a few changes I've already made that are easy changes any of you can incorporate into your lives if you are looking to become healthier versions of your already fabulous selves.  Tomorrow I'll blog about those and some recipes that are easy to make and yummy!

It's only been a little over a week since I started TIU, but I'm extremely committed and determined.  I lost about 3 lbs last week.  Even if you don't have weight to lose, this plan could still benefit you.  The girls implore you to be TONED, not "skinny soft".  I'm an ex-gymnast so I can co-sign. I have muscles and as much as I'd love to, I'll never have the build of a super model.  Even if I starved myself.

Legit: Skinnytaste Spinach Lasagna Rolls

I get little kid excited when I find a recipe that is healthy, easy and yummo.  A little "recipe trifecta", if you will. 

I bought all of my ingredients from Aldi (except the tomato sauce & spinach, which I already had on hand) and the bill was about $20. This recipe makes 9 servings, so you do the math.  Eating at home is sooooo much more economical than eating out.  It's disgusting what you will spend at a restaurant compared to what you will spend having a home cooked meal. Literally disgusting. 

I know a lot of you of you are familiar with the blog Skinnytaste, and if you aren't, then you need to get acquainted.  Gina, the blog's author, features the low-fat, healthy version of all of our favorite full-fat dishes. 

Last night I tried one of her reader's faves: Spinach Lasagna Rolls.  Can we say heaven in my mouth?  Perfectly portioned individual lasagnas at 225 calories a pop.  Don't mind if I do.  Each serving is 6 WW Points+ for those of you keeping track like moi (Down 5 lbs in 2 weeks btw. Thank you boot camp & WW!).   

My brother aka the roomie thinks I'm insane for taking pictures as I cook.  Keep side-eyeing me bro, but I must give the readers what they want. 

Ingredients:
9 lasagna noodles, cooked
10 oz frozen chopped spinach, thawed and completely drained
15 oz fat free ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
salt and fresh pepper
32 oz tomato sauce
9 tbsp (about 3 oz) part skim mozzarella cheese, shredded

While my noodles were boiling, I mixed together the spinach, parm, ricotta, egg, salt and pepper in a bowl.

Once noodles are cooked and dried, scoop and spread 1/3 C of the ricotta mix on each noodle:
Ladle a cup of spaghetti sauce (I'm clearly not Italian, so the canned sauce is fine by me.) in bottom of casserole dish before rolling and placing seam side down dish.  Top each roll with remaining sauce and 1 tbsp of mozz cheese.

Cover with foil and bake at 350 for 40 minutes.  Bam!

Dinner is served! 
Spring salad with baby carrots, cucumber, green olives, fat free croutons, fresh ground pepper and bacon bits served as a side.

Getting to know the Bargain Blonde: Part 2

Ello bargainistas!    Hold on to yer britches cause this post is very long.  My apologies, but I am long winded and I wanted to be thorough with my answers.   In part 2 I'm covering your personal, diet & fitness and random questions.   I'm going to devote and entire post to answering your questions about blogging, so look-out for that sometime this week.  Let's get personal ...

 
Chelsea asked, "If you could give one word of advice to us single ladies, what would it be?"

Yikes.  I could go on for days about this topic.  I see it like this: There are relationship girls and there are single girls.  I've always been a single girl minus the Lucifer era.  I haven't mentioned Lucifer in a while so for any newbie followers: Lucifer and I dated for 4 years, but prior to that, I never got super serious with a boy.

We broke up in February 2010 and our break-up was traumatic to say the least.  I've never told the Lucifer/Lindsey story, but maybe one day I will.  Since our break-up, I've really tried to not live my life worrying about the future, which is the advice I would give other single girls. 

I don't hold the belief that once I'm in a relationship, I'll magically have life and myself all figured out.  Because trust me, just because your in relationship, it doesn't mean you're happy. I don't think that once I have a wedding, all will be right in the world. 

If you live in the future, you'll never appreciate the now.  I try to enjoy the fact that as a "single lady" I get to do whatever I want when I want.   If you let it, being single allows you the time and space you need to figure yourself out.  I honestly think if you don't know how to be happily single and or how to be independent, then you shouldn't be in a relationship.  Be content with you before you give yourself to someone else.

Jess is back with another good question.  Hmmm ... what would you be surprised to know about me?  I feel like I'm a pretty open book, so this is tough.  You might be surprised to know that I won a cartwheel-a-thon in elementary school??  I really thought for days about this and I can't come up with anything good.  I suck.

My favorite guilty pleasure has pretty much already been revealed via this post: I'm a reality TV addict.  Although, I have no guilt about it. I own it!  Being a wine-o probably comes in a close second.


Ashleigh asked, "If you could marry any celebrity (including married ones), who would you pick and why?"

I would TOTALLY let Bill Rancic or Jason Hoppy wife me up in a second.  They are both funny, give their ladies a hard time (in a good way), are successful, tall, handsome, thoughtful and loving.  I'm so jealous of Guiliana and Bethenny, but I'll find my Bill or Jason one day.  Any man that will dress as a panda with his wife and baby is a winner in my book. 


Lauren asked, "What school did you almost go to other than Texas Tech University.  No I don't expect you to say OU, but I think it's cool to see how different things could have been especially since you are so hardcore TTU."

Oh Lauren!  Definitely not OU, but I am not an OU hater.  I save my animosity for all the bandwagon UT fans who never stepped foot in a college classroom.  But that's another post for another day.  Believe it or not, I almost went to my Mom's Alma Mater, Texas A&M. 
I only applied to TTU and A&M, and I am so glad I picked Tech because A&M's Journalism school ended up shutting down.  Not to mention, I love being a Red Raider, I love Lubbock and most of all, I love all my best friends I met during the best 4 years of my life.  Get your guns up!

I have a plethora of baby names picked out for my future babies that don't exist.  You know you do too.  My names change frequently, but if I popped some out today, I'd go with these names:

Yes, I think I would.  While no one is perfect, I do think I'm a very loyal friend and even provide a few good laughs every now and again. I'd totally give myself a BFF bracelet. 

JennyBeth said, "I'm a fan of knowing people's daily routines."

I'm a scumbag, so try not to judge.  I'm so NOT that girl that wakes up hours early, has some freshly brewed coffee and a hearty breakfast, spends time meticulously curling her hair and painting on a face of make-up.  That being said, here is my routine as of late.

I absolute hate mornings.  Despise them.  I've never been a morning person and I never will.  So in order to sleep in as long as possible, I shower the night before, and I put my wet hair in a big messy bun on the top of my head.

I set my alarm for 7 a.m. now that I live 2 miles from work.  I typically press snooze until around 7:15 a.m. or 7:20 a.m.  When I'm half awake laying in bed during the snooze period, I think about what I'm going to wear for the day.  I force myself out of bed cursing the morning in my head.  I pee (TMI?), wash my face and brush my teeth. 

Next I do my hurr.  I take down the big messy bun and my hair is still damp and very wavy.  I try to tame it, add mousse to it and pin back pieces with bobby pins.  Or, if it looks unsalvagable, I will put it back in a low messy bun leaving pieces to fall around my face.  I will back curl these pieces with a 1.5 inch curling iron.

At this point I only have a few minutes to get dressed, so I scurry around my room trying to find all the pieces I need.  Normally I won't be able to find the cami I need or the right cardigan, so I've grown accustomed to the playing hide-and-seek with my clothes.  Eventually I'll throw the outfit together I picked out while half asleep. 

Before grabbing my pink briefcase (yes, mam) and my purse, I put eyeliner and mascara on at the very least.  If I have time I will do an entire face of make-up, but this rarely happens. 

I am in the car by 7:50 or 7:55 and put my shoes on in the car.  I work from 8 a.m. to 5 p.m.  Now that I'm so close to work I come home for lunch every day, which is seriously heavenly.

I am home from work between 5:15 p.m. and 5:30 p.m. at which point I eat a small meal or snack before getting changed for boot camp.  My friend Courtney and I are in boot camp together, so we car pool.  We leave around 6 p.m. for boot camp. 

Boot camp lasts until 7:30 p.m. so I am home by 8 p.m.  I eat another small snack or meal before showering (depending on how many Weight Watchers points I have left).  After I shower, I watch a few of my shows, get on my computer to read blogs and/or write a post.  I fall asleep between 11 a.m. and midnight normally.  Sometimes later, but never earlier. Then I do the whole thing over again.  It's an exciting life I lead.  Are you jealous?

B asked, "What is your go to weight loss and workout routines?"

I was a competitive gymnast for 14 years, which meant 4 hour practices every day after school and 6 hour, 2-a-day practices in the summer.  Gymnasts don't have an off-season, so growing up I was always in shape.  However, I have never been a stick thin girl.  I have a very muscular, athletic build.  Even at my smallest, I will never be a size 0 or 2, which took years for me to accept.  Another story for another day.

So college was the first time in my life I didn't have to be at practice every single day.  I didn't know what to do with myself.  It was so strange not having an obligation to work out and I took full advantage of my new found freedom.  I'd go on work-out kicks now and then, but nothing serious until my senior year.   After 3.5 years, I had put on way more than the "Freshman 15" and it was time to get rid of it.  I remember when I decided to get back in shape, I told myself one day at a time is all you can do.

I started getting serious about working out and dieting January of my senior year.  By August when I graduated, I was almost back to my high school weight.  I hate to disappoint you, but I did it the old fashion way: working out and eating healthy.

I worked out about 5 days a week at our rec.  When I worked out, I did a high-intensity, 60 minute step aerobics class.  A few months into step class, I added interval training on the treadmill walking on the incline as high as it would go mixed with sprints on no incline.  I would spend about 20 to 30 minutes on the treadmill before step class.  I was hardcore, but it worked. 

I also was very strict with my diet eating mostly only lean meats, vegetables, fruit, egg whites and turkey bacon.  But trust me, I'd splurge, too.  I would eat something "bad" at least once a week, and I think it's important to do that.  You can't completely deprive yourself or else you'll end up binging.  

So that is what I did and I ended up losing about 40 lbs in 8 months.  You just have to be committed to changing your lifestyle and you have to recognize that you won't get in shape over night.  It takes time, it's certainly not easy, but if you stick to it, it will pay off. I remember when my old "fat" jeans started falling off me and I had to get rid of them.  Best. feeling. ever.  It was crazy to think that at one point they were so tight I could barely button them.  And for anyone who has ever lost a considerable amount of weight, you know that compliments are the best drug.  That's when I knew what I was doing was paying off, when every one around me started to notice. 

Chelsea asked, "Since you're in boot camp, what would The Bargain Blonde's go-to workout outfit look like? Favorite places to show for that attire?"

Probably no surprise here, but I don't get fancy to work out.  I wear boot-cut black spandex pants or spandex capris and a t-shirt.  Once I lose some lbs, I'll start wearing work-out tanks again.  I love Nike and won't wear any other brand of running shoes.  I buy all my athletic gear at Old Navy or for brand name gear, TJ Maxx is a must.

A few of you asked, "What boot camp to you go to?"

The boot camp is called Fit 30 and they have several locations in the Dallas/Ft. Worth area.  Fit in 30 days ... get it!?  We bought a Groupon for 16 sessions of this boot camp for $39.99.  I really do love it even though I complain about it.  It's a great way to get my big badonk back in gear and our trainer is very encouraging, but not annoying.  He does not yell at all.  He just pushes you, and that's exactly what I need.

Sweet (and Sour) Lou Lou asked, "What do you despise worst: working out or dieting?"

I'm not going to sugar coat this.  I hate the thought of actually going to work-out, but once I'm there, I love it (for the most part).  I'd say getting into the swing of working out is much more challenging than dieting, but the feeling you get after working out is the best.  Dieting isn't easy by any means, but I probably despise working out more. 



Leave it to Raven and Lauren to ask the random questions.  Raven wants to know if I will wash her hair when I come to visit her.  Yes Raven, I'll wash your hair, you weirdo.  You know I mean that in the most loving way possible. 

And Lauren asked what my favorite zoo animal was.  Well to answer your very crucial question, I think I'm going to have to go with penguins.  I love when they dive into the water and slide down the ice.  Plus, I absolutely love Happy Feet.  Cutest little guy ever:

Fitness Fail Friday: Week 4

How dreadful.  Last week I bragged about how great my FF posts have been in terms of holding me accountable on the fitness front.  I distinctly recall the statement, "How pathetic would I look if I went to blog a FF post and had only watched TV and drank wine?"  Welp, guilty as charged.  The neph's face says it all.  "Who me?"

I only worked out on Monday.  Major fitness fail.  Granted, I did a solid session of weights at the gym and then met my girlfriend Courtney for our "boot camp" at the park. It was strenuous, but still. There was no reason for me to slack on Tuesday, Wednesday and Thursday.  I am down to less than 8 weeks until my friend Christina's wedding in Scottsdale, and I refuse to look like a big blob in my bridesmaid dress.  The resort she's getting married at looks so gorgeous and I want to be able to enjoy myself.  Just look at pictures of this place:

Anyway, so this week was just a little bump in the road, I'm getting back on track next week.  I didn't completely blow it because I have still been keeping my calories to around 1200 a day and the scale is down a pound from last week.  I guess it could be worse, but I need to step my game up.  Next week there are no excuses.  I must get the body of my doppelgänger, Miss Lauren Conrad ( I wish).

OK, so I lied

Scratch my plan to work-out today as mentioned in the previous FF post. Instead, I'm going to Happy Hour to sit on a patio and enjoy a margarita with a few friends. I mean, it's 80 degrees here and a Friday ...

need I say more?

It's not going to be a total bust because I am going to request a "Skinnygirl Margarita", Bethenny Frankel's 100 calorie margarita concoction.  I am also going to force myself to do some extra cardio this weekend to make up for it.   You just can't say no to patio weather, especially when we were snowed-in a few weeks ago.

•2 oz of Clear Premium Tequila (count 1, 2 while you pour, no need for measuring)
•Tiny splash of Orange Liquor
•Juice of 4 Fresh Lime Wedges

Preparation:
To serve on the rocks, combine all ingredients over a glass of ice and garnish with a lime wedge

Fitness Friday: Week 3

Welcome to week 3 of Fitness Friday! I’ve got to tell you, this FF post has been a great way to hold myself accountable. If I did what I really wanted to do every night after work, I’d sit on my couch and watch my favorite TV shows while sipping on some of the sweet nectar.

How pathetic would I look if I went to write a FF post and had done nothing but guzzle wine and watch trash TV? Every time I try to convince myself to skip the gym or indulge in unhealthy food, I remember 1) my ultimate goal to get fit and fab and 2) that I have to report my progress on my blog.

As I mentioned in week 2, today I’m sharing my favorite easy and healthy snacks. According to a self.com article, 64 percent of snacks aren’t planned. Unplanned snaking could easily lead to bad choices like processed, high-calorie food from your office vending machine. Instead, stock your desk drawers or office fridge with some of these healthy options that are easy to grab when you hit that mid-day lull.

Simple Cucumber and Cherry Tomato Salad:  Mix a cup of sliced, peeled cucumber with about 10 cherry tomatoes and a tablespoon of lite vinaigrette dressing (my fave is the Ken's Steak House).  I like to season mine with some fresh ground pepper.  Very refreshing and low in cals.  I'll make it the night before and bring some to work for an afternoon snack at my desk.

Low Cal Cheese & Crackers: Cheese scares a lot of people who are watching their calorie intake.  However, there are so many reduced fat options now that cheese is no longer the enemy.  My favorite cracker for this snack is a water cracker.  I love the crunch, but more importantly, they have little flavor, which makes it a great neutral foundation so you can savor the cheese.

Peanut Butter and Caramel Mini Rice Cakes: I like to dip mini caramel rice cakes into about a tablespoon of Jif Natural PB.  Some natural peanut butter's annoy me because you have to mix them and keep them refrigerated.  This Jif version does not have to be stirred or refrigerated, so I keep it in my desk drawer with a bag of rice cakes for the ultimate convenience snack.  I'm not a fan of caramel, but for some reason this flavor goes along great with PB.

Hopefully one of those 3 options sounds enticing to you.  Now on to the "fun" stuff.  Below is what I did this week at the gym:

Saturday: Went to a yoga class and then took my nephew to the park.  He thinks its fun to run from me so I spent the entire time chasing him and almost having a heart attack every time he made a beeline for the nearby street.  I would tell him, "Reese, this is not funny!" to which he would giggle, run and say, "Hahaha, yes it is Aunt Lindsey." Boys will be boys.

Sunday:  12 mile mountain bike ride - NEVER AGAIN.  So my friend Kathryn and I went to brunch Sunday and while we were finishing up, she asked me if I wanted to go bike riding around a local lake since it was so nice outside.  "Sure," I said thinking back to my middle school days when I loved riding my bike around the neighborhood.  Reality check: Biking 12 miles up and down hills fighting the wind on a mountain bike is nothing like riding bikes back in the day.  I've decided I'm not cut-out for bike riding.  The seat really hurt and my booty felt bruised for the next 2 days and trust me, I've got plenty of padding back there. 

Monday: Valentine's Day.  After work I met up with my friend Courtney for Happy Hour.  We we're supposed to run hills and conduct a little "boot camp" at a nearby park, but for some reason wine sounded better to us.  Do you blame us?

Tuesday:  Bicep/Triceps + 30 minutes interval cardio + 10 min suana

Wednesday: Hamstrings/Quads/Calves + 30 minutes interval cardio + 20 min sauna

Thursday: Rested, legs we're sore.

Friday: After work I'm doing chest/shoulders/back and cardio.

Saturday:   I plan on going to yoga again and it's supposed to nice so I'm sure I'll be chasing my nephew again at the park.

Sunday: NOT going on a 12 mile bike ride.

Bargain brand name activewear

Cash burns a hole in my pocket, which is why I never go to the ATM and get any unless I need it for a "cash only" situation. I literally put everything on my debit card.  In college I once even tried to buy a 5 cent scantron on my debit card from the campus bookstore and the guy said, "Are you kidding me?  Just take it." No sir, I was not kidding you and thanks for the free scantron.

So I had some Valentine's Day cash (thanks Grandma!) and I didn't have it in my wallet for more than 24 hours before it was gone.  You can blame this one on TJ Maxx.  How was I supposed to resist a pair of Nike Dri-Fit Women's Training Pants for only $29 when they are regularly sold for $60?  You will never catch me buying a pair of $60 athletic pants, I don't care how amazing they claim they'll make my butt look.

I really was only on the hunt for a new pair of pants, but I couldn't say no to this Fila work-out tank with built-in bra on clearance for $12.  The blue tag says "compare at $34", but the actual Fila tag had an original price of $38, which means it was about 70 percent off.  Geeze, I'm a math whiz.

I've been low on athletic socks for a while now (I seriously want to know what happens to missing socks), and I prefer thick ones because I feel like the thin ones slide down too much, plus I like the added cushion.  I got this 3-pack of thick Puma athletic socks for $5.99, and they are regularly $12. 
I almost didn't put this picture up because my manicure (or lack there of) is so atrocious. I was sitting in a meeting yesterday with our Senior Vice President when I caught a glimpse of my nails and immediately tried to hide them. Did that stop me from coming to work with them looking just as horrendous today? Nope. I will be giving myself a polish change tonight if it is the last thing I do. Try not to judge me too much. I'd judge me.

Fitness Friday: Week 2

It’s a Christmas miracle! Not really. I shouldn’t be excited about this, but what I call my “fat work pants” fit comfortably again. Yes, sadly there was a time there when they didn’t. I slip up on my fitness for a few weeks … Oh, did I say weeks? I meant months … and before I know it, I’m laying on the ground praying to the skinny gods that my pants zip up. We've all been here:

Cue: “Fitness Fridays”, and here is what I did this week:

Nutrition:
I’m trying to stick to around 1200 calories a day. To help achieve my 1200 calorie goal, I’m making a concerted effort to not waste unnecessary calories on things like coffee creamer, boredom snacking and booze (although I really wanted that glass of wine during The Bachelor this week).

Also, I have a diet and fitness journal I bought on Amazon that I use to track calories, but I certainly don’t use it religiously. That’s no way to live. I’m just making sure I’m aware of the calorie decisions I’m making and holding myself accountable. The journal's description claims those who keep a diary and record their progress lose twice as much weight as those who don't.  We'll see about that.

Fitness:
Typically I’m at the gym for an hour to an hour and a half. I start out by stretching then 30 to 45 minutes of weight training followed up with 30 minutes of interval cardio. Interval cardio gives you the most bang for your calorie-burning buck.

To set up your own calorie-burning interval workout, simply increase your intensity to a hard pace for 1 minute followed by 2 minutes at an easy pace; repeat for up to 30 minutes. If you don’t want to take my word for it: read this article about the benefits of interval cardio.

My routine this week:
Monday: Biceps/triceps then 30 minutes elliptical and treadmill intervals (20 mins elliptical & 10 mins treadmill because I get bored if I stay on just one machine.)

Tuesday: Quads/ hamstrings/calves + 30 minutes elliptical and treadmill intervals + 20 minutes in sauna (Ladies … if you are looking for some eye candy, come hang with me in the sauna. Oh my!)

Wednesday: Chest/Shoulders/Back + 30 minutes elliptical and treadmill intervals + 20 minutes sauna + Jackie Warner core video for abs via On Demand’s free Fitness TV (I just discovered Fitness TV. They have so many FREE work-out videos like Jillian Michael’s 30 Day Shred, Jackie Warner work-outs, Body by Bethenny yoga, etc. Check out your local listings to see if you get it in your area. It’s a great way to burn some cals from your living room.)

Thursday: REST DAY! I had a few errands to run after work and my brother and nephew decided my apartment doubled as a grocery store, so I had them over for dinner.

FRIDAY (Today, obvi): I have my brand new Texas Tech gym bag (arrived on my doorstep Tuesday & I love it!) packed and ready to go under my desk. I’m going to focus on abs/back and of course get in 30 mins of interval cardio.

WEEKEND: My goal is go to a yoga class and get at least one session of cardio in. I'll have to let you know how that turns out next Friday.

Fitness (& freezing) Friday!

Oh, hello 6+ inches of snow.  This weather just keeps getting more insane in Texas! My office was open today, so I attempted to drive into work (about 15 miles away), but couldn't even get out of my apartment parking lot.  My tires just kept spinning and I was stuck.  To give you an idea of the snow here, here is my apartment pool this morning around 8 a.m.:
 

Even though it is a freezing Friday, this post is all about Fitness Friday, so I'll get to it: 

I started off this week by working out with a girlfriend at a nearby park.  We ran hills, did lunges up hill (omg), walked at least a mile and ran suicides across a football field (who did we think we were?).

Then the "Texas blizzard of 2011" hit us, so Tuesday I did nothing but stay indoors under warm blankets. Fail. Wednesday I bundled up and walked to my apartment gym and got a good session of cardio and weights in.  Last night I was going to do the same, but on my walk to pay my rent, I slipped and fell pretty bad on solid ice.  No gym after that, I was pouting and was sore from the fall.  Fail X 2.  This afternoon I'm going to my apartment gym to do cardio and weights again so that I will at least meet my goal of 3 days in one week.

As far as my diet goes I've done good this week watching calories.  I haven't been drinking as much water as I should or taking my multi-vitamin every day, but hey ... one step at a time.  The scale has dropped a few pounds so far, so something is working.

I've been using random travel carry-ons for my gym bag, but I decided if I'm going to get serious about getting fit, I need a serious gym bag that is both functional and somewhat stylish.

I started my gym bag research the old fashion way: by Googling "cheap gym bag for women", and one of the results was from Overstock.com.  I picked out a couple that I liked around a $30 price point, but eventually decided on one with my Alma mater's logo embroidered on it.  A few clicks later, my new gym bag was ordered.  Here is what it looks like (They have 25 schools to choose from all priced differently.  Click here to see if they have your school):
