Stella & Dot Winner! + #fitphotochallenge + Meatloaf Cupcakes

How is everyone on this hump day?  Good, I presume.  Today's post is a little eclectic, so bare with me.

First and foremost, I'm announcing the winner of yesterday's Stella & Dot giveaway!  I used Random.org and the lucky lady was #20, which was Karli @ the blog California Dreamin.

Next, I wanted to let y'all know about a little challenge a few of my bloggy friends (Steph & Jess) and I started yesterday, so there is plenty of time to catch up!  It's similar to the "March Photo a Day" challenge I blogged about last week, but with a fitness theme.  It's called #fitphotochallenge and it last 30 days.  However, I've committed to doing 3 cycles of the challenge, so I'm on board for 90 days.

There is no way in hell I'd post a "before swimsuit pic".  I'd rather have my eyes gouged out, which is exactly what you would do if you saw me in a swim suit right now.   So for any of you who choked on your coffee after reading the Day 1 prompt, don't worry.  It can be a fully clothed pic.  I'm posting mine to Instagram (@thebargainblonde) every day and I'd love for any one who is trying to stay accountable with their fitness to join the revolution.  Let me know if you are on board.

Speaking of getting fit ... Nice transition, huh?  I thought so.  Last night I tested yet another Skinnytaste.com recipe and as usual, it was amaze-balls.  Gina, the GENIUS behind Skinnytaste.com, seriously needs her own cookbook or TV show. I have not tried one single thing on her site that was not phenom.  You don't even feel like what you're eating could possibly be healthy, but it is.  Just how does she do it?

Dun, dun, dun ... I present to you my version of Meatloaf Cupcakes topped with Skinny Mashed Potatoes and served with a side of Roasted Parmesan Green Beans

Ingredients:
The recipe said to use metal cupcake liners, which I didn't have. I just used cooking spray and they popped right out of the pan when they were done baking.
 Skinny taters!  Yummmm.

Is your mouth watering?  Because I may or may not still be dreaming about these little bites of heaven.  #fatty

    I just started working out and eating right, I just always forget about the challenges and never take pictures! LOL Maybe I'll try.

  2. i'm highly impressed by your cooking skills. i would never have the patience to make food which is why i either use a crock pot or microwave. and if i wanted to make that shizz i would break the bank buying all the stuff i needed. #fml. but they do look yum! it's making me hungry. but what else is new?

  7. like I said, since I am Gina's #1 fan I have obviously made these muffs before (teehee I kid I kid) and I agree... they are SO GOOD! Hmm.. all that ground turkey in my freezer might just be transformed this weekend. :)

  13. I don't eat meat, but I'm all about healthier mashed potatoes! YUM. I also would not consider posting a bathing suit pic right now. YIKES. But this challenge is interesting! Eager to see how it goes :)

  14. OMG, you ALWAYS, ALWAYS, ALWAYS have the best looking dinners!!! I still need to post my Day 2! I did better earlier today than dinner {Kilabasa} don't. judge. me....and maybe I had cornbread tooo......WEAK I know. BABY STEPS!!!!! But I am still down a pound!!!!!!!! hahahaha

  15. I just read an article in a magazine this morning about meatloaf cupcakes! Yours look delish. BUT, I also so a recipe for chicken and waffle cupcakes...must try!

  16. I'm always up for a challenge! We'll see if I can do this or not ... the house situation/move/packing [and dealing with a sick kid] is taking up a lot of time right now. BUT I'm now part of the iPhone/instagram world so maybe, just maybe!
